Your support to buy local from a fifth and sixth generational working cattle ranch means the world to us. Below is an outline of the benefits and options we produce annually with our custom beef program.
How it Works
Each year we will contact you and confirm your custom order, which usually consists of a whole or half beef from us. Before we ship our herd for commercial sales, we hand-pick beef calves specifically to support you and families just like yours. Afterward, they spend the next year grazing on our pastures and awaiting the final 65 to 70-day grain-finishing feed out process prior to the scheduled butcher date. During the butcher process you speak directly to the butcher to ensure your order is cut just the way you like!
What You Get
Your family will enjoy custom beef raised at the Hashknife Ranch in south central Montana. We produce grass fed, pasture raised Red Angus cattle from birth to butcher. Every steak, roast, and package of burger is guaranteed hormone and antibiotic free. During the grain finishing process we hand feed the beef twice daily until we transport it to the butcher.
These animals weigh approximately 1,000 pounds at butcher time compared to commercially produced beef, which usually weighs 1,400 pounds. This deliberate decision in our program creates a more tender product, and lowers overall cost to you, with minimized waste. We provide recommendations and any additional information you request throughout the entirety of the process.
The Cost
We recognize this can be a large financial decision for your family. Our 2026 rates are $4.69 per pound of rail, or hanging, weight, which is a carcass with no hide, head, legs and entrails. If you think of the iconic Rocky scene of Sylvester Stallone working out on a side of beef, that is what we base our price.
For 2025, our averages were 670 pounds rail weight for an average cost of $3,145.71 per whole beef. Of the rail weight, an average 402 pounds of packaged meat went into our customers’ freezers depending on the customizations of the cuts.
Because of the lower butcher weight, a whole Hashknife beef usually costs approximately $3,100.00, which averages to about $7.80 a pound for all beef cuts and burger products. That means your burger costs approximately $7.80 a pound and prime cuts such as ribeye, T-bone, sirloin, etc. all cost approximately $7.80 as well! Finally, do not forget that all butchering and processing costs are included in our final sales price.
